It costs a fraction of many other models in our ratings and performs admirably in most of our lab tests. The 1,watt cooker scores Excellent ratings for both pressure-cooking and slow-cooking.
Breville Fast Slow Pro 6 qt. Our beef stew turned out tender and ready to eat in 5 hours, and the chili was tender and delicious in 7 hours. The ceramic nonstick coating is a cinch to clean and didn't show any scratches after testing. The only preset it's missing that most multi-cookers have is a rice-cooking setting. Unlike multi-cookers with a pressure-cook mode, this model is oval-shaped like most slow cookers, which is ideal for cooking large cuts of meat or racks of ribs. Slow-cooking is where it's at, and this 1,watt model earns a Very Good rating in that test.
This cooker has a baking function, too, which we tested with mixed results. Our chocolate chip bars were nice and chewy on top but burnt on the bottom around the corners of the pot. Like the Cuisinart above, this cooker's oblong shape is useful for bulky roasts and racks of ribs.

Instant Pot says the food-burn alert is a safety mechanism that stops heating to prevent food from burning but adds that this warning can also occur when cooking very starchy foods that settle at the bottom of the pot. Despite its many buttons and spaceship-like appearance, the Instant Pot Duo like most Instant Pot models is simple to use. We were cooking beans within minutes of scanning the instructions.
By comparison, the controls on competitors like the T-fal were complicated, and the manual for the Cuckoo iCook Q5 Premium was impenetrable. You can make a sofrito for soup base using the low-heat setting or caramelize onions and garlic on the high setting. The Instant Pot also has two pressure settings—low and high—whereas some other models we tested have only one. You can also adjust the time and pressure level within the programmed functions and the machine will remember these adjustments the next time you turn it on.
The only somewhat notable cook setting that the Duo lacks is sous vide, which some other Instant Pots including our upgrade pick include. A stainless steel pot, on the other hand, will likely outlast the appliance itself.
The lid on the Duo, like on all Instant Pots, detaches for easy cleaning. In comparison, we found that the hinged lids on some other models, like the T-fal and Ninja Foodi, made both cleaning and storing the cooker difficult.
Like all modern pressure cookers, the Instant Pot has multiple safety mechanisms to keep pressure at a safe level and to prevent you from opening the lid while the pot is still under pressure which could lead to a dangerous eruption of hot liquid. We think the 6-quart model is the most useful size for home cooks, but Instant Pot makes an 8-quart version for larger batches and a smaller 3-quart version as well. The Instant Pot Duo 6-Quart also comes in a few colors besides the basic black: red , teal , and white. The depression around the rim of the outer pot traps salt, crumbs, and gunk, but we clear it out with canned air and a damp rag. For intense browning, sear meat in a separate pan on the stove, deglaze, and add meat and drippings to the electric cooker. This process may kill your one-pot-dinner fantasies, but sometimes life is a compromise. To quickly release pressure from the pot, you need to turn the valve in the lid that shoots out steam. It seems like every one to two years, Instant Pot rolls out a new model that promises smarter cooking programs and overall better usability.
The Duo Evo Plus also comes with an extra silicone sealing ring for the lid. That said, the basic cooking functions—pressure, slow, steam, yogurt, rice, grain—on the Duo Evo Plus are essentially the same as on other Instant Pot models. One improvement that really stands out is that the handles on the inner cooking pot stay cool, which lets you easily remove the pot, even when hot.
Another nice update on the Duo Evo Plus is the big, bright, and intuitive control panel. We also like the vented valve cover on the Duo Evo Plus. All of this makes the Duo Evo Plus a bit less scary to use than the Duo, which requires you to turn the steam valve itself to release pressure and might make some folks nervous about steam burns.
You also get two silicone sealing rings which ensure the lid maintains a tight seal with the Duo Evo Plus. Using dedicated gaskets for pungent and mild foods will help avoid that. And the ones included with the Duo Evo Plus are different colors—one red and one white—so you can easily tell which is which. This function allows you to cook vacuum-sealed foods in a water bath set to between 77 and degrees Fahrenheit.
In our tests, we found the sous vide setting on the Duo Evo Plus consistently ran 5 degrees below our target temperature. But it still cooked our modest vacuum-sealed filet of salmon in 45 minutes. And we think it could be useful for folks who want to cook or hold food at a specific temperature for an extended period of time, such as while keeping soup warm on a buffet table.
That said, if you want to do sous vide cooking, consider getting an immersion circulator. In our tests, we found that the QuickCool tray reduced depressurization time by half, from just over 30 minutes down to 15 minutes. We suggest that you bookmark it for easy reference. Like all Instant Pot models, the Duo Evo Plus comes with a one-year limited warranty that mainly covers manufacturer defects—not accidents, misuse, or abuse. Removing the valve parts and gasket from the lid is simple and will make cleaning off any food residue easier to do.
The entire lid is also dishwasher safe. We found that baking just the ring in a degree oven for 20 to 30 minutes takes the smell out just clean it thoroughly first to avoid baking on any gunk or grease.
